- UseThis very popular type of flat pasta, which has a cut that is slightly thinner than Pappardelle, can be enjoyed in basically the same way. Thick meat-based ragus work well with this pasta, however, lighter, white wine or Pernot wine-based sauces made with a variety of sea foods, such as clams, shrimps and/or scallops, also work equally well. Alternatively, this pasta can be simply enjoyed on its own with some extra virgin olive oil (we suggest Titone Valli Trapanesi DOP Organic) drizzled on top along with some freshly grated Parmigiano Reggiano cheese.
