  • Description The name Secco del Borgo derives from the traditional peasant name for white wine vinegar which was used in the old days to distinguish it from white balsamic vinegar which is made using a different process. Secco del Borgo is made from white Trebbiano grapes from Emilia Romagna and prepared in the old traditional way of turning wine into vinegar. This is done by adding wine to vats (today made of steel) which contain wood chips. Acetic acid bacteria, which can be found naturally occuring on the surface of the wood chips, gradually acidify the wine turning it slowly into vinegar. The resulting product is then mellowed in oak barrels where it takes on its warm amber colour and acquires a pungent round taste unque to il Secco del Borgo vinegar.
  • Use This product is ideal on fresh salads and for use in marinades. It can also be mixed together with the Red Label Condimento for a special, sour and sweet experience.
