  • DescriptionThis balsamic vinegar is the result of a certified organic production process where the grapes are cultivated without the use of any pesticides. Although aged to the same extent as the “Podere Fornace”, acquiring a similar density and structure, this balsamic results from a slightly different process which involves mixing the concentrated must from the same two varieties of grapes, but in different proportions (30% Lambrusco Salamino, 70% Trebbiano), and a smaller percentage of wine vinegar (5-10%) and then ageing the mixture in oak and acacia barrels. Its principal organoleptic characteristics consist of a dark and deep yet brilliant brown colour, a persistent balsamic aroma with savoury notes, with a well-balanced overall sweet and sour taste with a slight tendency on the sweeter side of things.
