- DescriptionThis balsamic undergoes the longest ageing process spending 5 years in a larger oak barrel before being transferred to a smaller chestnut barrel for another 3 years. Made from 100% Trebbiano concentrated grape must, it is considered by the Fiorini family to be the truest expression of the traditional balsamic vinegar production method. Its resulting organoleptic charastsitics yield the same dark and deep yet brilliant brown colour consistent with other balsamics, but a more broad, complex and penetrating bouquet with a smooth, slightly sweet taste piqued by a pleasant acidity that results from the unique ageing process.
- UseGiven its balance and texture resulting from its long ageing, this basalmic should only be used as a topping with certain dishes, in particular, grilled and roasted meats, omelettes and other egg dishes, grilled prawns and tuna, fresh strawberry, fresh figs with prosciutto di Parma, and sharp aged cheeses such as Parmigiano Reggiano.
